Finalmente me decidí por esta receta de Soba Noodles con Mango y Berenjena. Me encantan los fideos Soba (podes verlos en otra de mis recetas), pero nunca se me hubiera ocurrido probarlos con berenjena y mango (esto es lo que me encanta de los libros de cocina… descubrir nuevas combinaciones!). La combinación parece rara, pero la textura del mango maduro con la hierbas, berenjena y fideos es perfecta. En serio, perfecta! Probala y contame si te gusto tanto como a mi!

Finally I decided to give one recipe a try and made this Soba Noodles with Eggplant and Mango. I love Soba noodles (you can see another recipe here) but never though to try it with eggplant and mango (this is what I love about cookbooks… I always discover something new!). The combination seems strange, but the texture of the ripe mango, with the herbs, eggplant and soba noodles is perfect. Just perfect. Give this recipe a try and let me know what you think!

Soba Noodles con Berenjena y Mango

Ingredientes

  • 1/2 taza de vinagre de arroz
  • 3 cdas de miel o azúcar cruda
  • 1/2 cdta de sal
  • 2 dientes de ajo, aplastados
  • 1/2 chile, picado
  • 1 cda de aceite de sesamo
  • 1 lima, ralladura y jugo
  • 2 cdas de aceite de girasol
  • 2 berenjenas, cortada en cubos
  • 250 gr de fideos Soba
  • 1 mango, cortado en cubos
  • 1 taza de albahaca fresca, picada
  • 1 taza de cilantro fresco, picado
  • 1/2 cebolla morada, cortada finamente en rodajas

Preparación

  1. En una olla pequeña calentar el vinagre, el azúcar (o miel) y sal durante 1 minuto, hasta que el azúcar (o miel) se disuelva.
  2. Retirar del fuego y añadir el ajo, Chile y aceite de sésamo.
  3. Dejar enfriar y añadir la ralladura de limón y el jugo.
  4. Calentar el aceite de girasol en una sartén grande y saltear la berenjena en tres o cuatro tandas. Una vez doradas retirar a un colador, espolvorear con sal y dejar allí para drenar.
  5. Cocine los fideos en abundante agua con sal hirviendo, revolviendo ocasionalmente. Deben cocinarce de 5 -8 minutos para llegar a ser tiernos, pero aún al dente. Escurrir y enjuagar muy bien bajo el chorro de agua fría.
  6. Sacuda el exceso de agua tanto como sea posible, deje que se sequen. En un tazón mezclar los #deos con el aderezo, mango, berenjena, la mitad de las hierbas y la cebolla. Ahora puede dejar esto a un lado durante 1 a 2 horas.
  7. Al momento de servir, agregue el resto de las hierbas, mezclelo bien y luego servirlo individualmente en un plato o bowl.

Soba Noodles with Eggplant and Mango

Ingredients

  • 1/2 cup of rice vinegar
  • 3 tbsp of raw honey or sugar
  • 1/2 tsp of salt
  • 2 garlic cloves
  • 1/2 fresh chile, finely chopped
  • 1 tsp sesame oil
  • 1 lime, zest and juice
  • 2 tbsp of sunflower oil
  • 2 eggplants, diced
  • 9 oz of soba noodles
  • 1 large ripe mango, diced
  • 1 cup of fresh basil, chopped
  • 1 cup of fresh cilantro, chopped
  • 1/2 red onion, very thinly sliced

Method

  1. In a small saucepan gently warm the vinegar, sugar (or honey) and salt for 1 minute, just until the sugar (or honey) dissolves.
  2. Remove from heat and add the garlic, chile and sesame oil. Allow to cool, then add the lime zest and juice.
  3. Heat up the sunfower oil in a large pan and sautee the eggplant in three or four batches. Once golden brown remove to a colander, sprinkle with salt and leave there to drain.
  4. Cook the noodles in plenty boiling salted water, stirring occasionally. They should take 5 to 8 minutes to become tender but still al dente. Drain and rinse well under running cold water.
  5. Shake off as much excess water as possible, then leave to dry.
  6. In a mixing bowl toss the noodles with the dressing, mango, eggplant, half of the herbs and the onion. You can now leave this aside for 1 to 2 hours.
  7. When ready to serve add the rest of the herbs and mix well, then pile on a plate or in a bowl.
