Blinis de Garbanzo

con Granada, Aguacate y Microgreens

Ingredientes

BLINIS DE GARBANZO
  • 1 taza de harina de garbanzo
  • 1 huevo
  • 1/2 taza de Agua
  • 1 cucharada de Aceite de oliva
  • 1 Cucharadita de sal
  • 2 cebollas de verdeo
CREMA DE AGUACATE
  • 3 cucharadas de queso crema (light) o Yogur Griego
  • 1/2 aguacate
  • 1 cebolla de verdeo picado
  • 1 cucharadita de sal
  • Jugo de 1/2 lima
EXTRA
    • Microgreens de Brócoli y Mostaza

Preparación

  1. Para los blinis, batir 1 huevo con 1/2 taza de agua, cebolla de verdeo picada y aceite de oliva.
  2. En otro bol mezclar la harina de garbanzos con sal y pimienta y hacerle un huequito en el medio.
  3. Agregar la mezcla humeda en el centro y batir hasta obtener una mezcla bastante liquido, como la de panqueques.
  4. Si esta muy espesa, agregale mas agua, y si esta muy aguada un poco mas de harina.
  5. Calentar una sarten anti-adherente chica a fuego medio alto y verter 2 cucharadas de la mezcla en el centro. Dejar que la masa se esparza y formar panquequitos. Es importante que no la muevas y la dejes asentarse por 5 minutos.
  6. Luego darlas vuelta y cocinarlas por 3 minutos mas. Repetir el proceso con el resto de la mezcla.
  7. Para la crema de aguacate, mezclar el queso crema con el aguacate, cebolla de verdeo, sal y jugo de lima con una procesadora de mano hasta obtener una salsa cremosa.
  8. Para servir (te recomiendo 2 0 3 por persona), tomar 1 blini, cubrirlo con la crema de aguacate y ponerle los verdes y semillas de granada encima.
Es un plato genial para un almuerzo rápido o una rica entradita para compartir con amigos.

Chickpea Blinis

Ingredients

CHICKPEA BLINIS
  • 1 cup chickpea flour
  • 1 egg
  • 1/2 cup of water
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1 pinch of pepper
  • 2 green onions, chopped
AVOCADO CREAM CHEESE
  • 2 tablespoons of fat free cream cheese or greek yogurt
  • 1/2 avocado
  • 1 green onion, chopped
  • 1 teaspoon of salt
  • Juice of 1/2 lime
EXTRA
  • Kale microgreens
  • Pomegranate seeds
TOPPINGS AND EXTRAS
  • Whole Wheat Pita Bread
  • Mustard Greens
  • Honey Mustard
  • Avocado
  • Swiss Cheese

Method

  1. For the blinis, beat 1 egg with 1/2 cup water, chopped green onions and olive oil.
  2. In another bowl mix the chickpea flour with salt and pepper. Add the wet mixture and beat until mixture is unified and runny, like pancake batter. If you feel that it’s too thick, add more water, if it’s too runny add a little more flour.
  3. Heat a non-stick skillet over medium high heat and pour 2 tablespoons of the mixture in the center. Let the mixture set and spread into little pancakes or blinis. It’s important not to move it and let sit for at least 5 minutes before turning it over.
  4. Once it sets and little bubbles appear on the top, flip it over and cook for 3 more minutes. Repeat the process with the rest of the mixture.
  5. For the avocado cream, mix cream cheese with avocado, green onion, salt, and lime juice with a hand processor until you get creamy green sauce. Taste it, and season it to your taste with salt and pepper.
  6. To serve (I recommend 2 or 3 per person), take 1 blini, cover it with avocado cream cheese and put the greens and pomegranate seeds on top.
This dish is great for a quick lunch or an appetizer to share with friends.
