Tarta de Hinojo y Coco | Fennel Coconut Quiche

 

El hinojo es una de esos ingredientes que no uso tanto como quisiera. Es crujiente, ligeramente dulce y añade frescura a la mayoría de las ensaladas o platos, y la mejor parte es que es ahora esta en temporada! (así que no hay excusa) Aparte, al igual que su familia extendida (perejil, eneldo, cilantro y apio) tienen un alto contenido de antioxidantes, es alto en Vitamina C, y es una gran fuente de fibra!

Seleccionarlo es fácil pero tiene su maña:  te sugiero que busques que las bombillas estén limpias, firmes y sólidos, sin signos de división, moretones o manchas. Los bulbos deben ser de color verde blanquecino o de color pálido. Los tallos deben ser largos y no muy abiertos. Tanto los tallos y las hojas deben ser de color verde. No debe haber signos de brotes de floración, ya que esto indica que el vegetal es la madurez pasado. El  Hinojo fresco debe tener un aroma fragante, olor sutil de regaliz o anís. Una vez que uses lo necesario, lo podes guardar en el cajón de verduras del refrigerador, donde se mantendrá fresco unos cuatro días. Igualmente, te recomiendo consumirlo el día de su compra, para obtener el mejor sabor!

Fennel is one of those vegetables I don’t use enough. It’s crunchy, slightly sweet and adds freshness to most salads or dishes, and the best part is that it’s now in season! Like it’s fellow spices (parsley, dill, coriander and celery) its very high in antioxidants, it supports your immune system because of its high content content of vitamin C, and its a great source of fiber!

To select Fennel in a store, make sure that the bulbs are clean, firm and solid, without signs of splitting, bruising or spotting. The bulbs should be whitish or pale green in color. The stalks should be relatively straight and closely superimposed around the bulb and should not splay out to the sides too much. Both the stalks and the leaves should be green in color. There should be no signs of flowering buds as this indicates that the vegetable is past maturity. Fresh fennel should have a fragrant aroma, smelling subtly of licorice or anise. Store fresh fennel in the refrigerator crisper, where it should keep fresh for about four days. Yet, it is best to consume fennel soon after purchase since as it ages, it tends to gradually lose its flavor.

This Fennel Coconut Tart combines the sweetness and freshness of the fennel with coconut milk, crimini mushrooms and Smoked Paprika Salt from Salt Traders CR (which adds a wonderful smokey flavor that I adore!). The crust is gluten free and made from cauliflower! Don’t miss savory sweet delight!

Tarta de Hinojo y Coco

Ingredientes

MASA
  • 2 tazas harina de maiz
  • 1/2 taza harina de arroz
  • 1 coliflor
  • 1/2 cdta sal marina
  • 3 cdas ghee o aceite de coco
  • 1 huevo
RELLENO
  • 1/2 taza leche de coco
  • 1 huevo, 1 clara
  • 1/2 cdta sal de paprika ahumada
  • 2 ramas de romero fresco
  • 5 hongos crimini
  • 1 hinojo

Preparación

  1. Empezar preparando la masa. En una procesadora de alimentos mezclar el coliflor, sal, huevo y aceite de coco, hasta formar una pasta húmeda.
  2. Verter en un bol e integrar la harina de arroz y de maíz hasta formar una masa.
  3. Para el relleno, cortar el hinojo en finas rodajas, picar los hongos, sacarle las hojas al romero y picarlo. Batir el huevo con la leche de coco y agregarle la paprika ahumada, hinojo, hongos y romero.
  4. Pre calentar el horno a 190C (375F).
  5. Enmantecar con ghee o aceite de coco las tarteras chiquitas o una mediana.
  6. Esparcir la masa en cada tartera y agregarle el relleno.
  7. Hornear por 35 minutos o hasta que veas los bordes doraditos.

Fennel Coconut Quiche

Ingredients

CRUST
  • 2 cups corn flour
  • 1/2 cup rice flour
  • 1 cauliflower head
  • 1/2 tsp sea salt
  • 3 tbsp ghee or coconut oil
  • 1 egg
FILLING
  • 1/2 cup coconut milk
  • 1 egg, 1 egg white
  • 1/2 tsp smoked paprika
  • 2 springs of rosemary
  • 5 crimini mushrooms
  • 1 fennel bulb

Method

  1. To make the tart crust, pulse the cauliflower, salt, egg and coconut oil in a food processor, until a paste is formed.
  2. Place it on a bowl and slowly add the corn and rice flour until the dough is formed.
  3. For the filling, thinly slice the fennel bulb and chop the rosemary leaves an mushrooms. Whisk the egg, coconut milk and paprika, and mix it with the Fennel, mushrooms and Rosemary leaves.
  4. Pre-heat the oven to 190C (375F).
  5. Use your hands to press the dough evenly into the bottom of the tart tins.
  6. Pour the filling into the tart case and bake for about 35 minutes or until golden brown.
