Tacos al pastor

Estoy antojada de unos buenos tacos al pastor vegetarianos desde mi viaje a México. Obviamente comí tacos vegetarianos muy buenos, descubrí ingredientes únicos (como el huitlacoche), preparaciones increíbles, picantes, salsas… menos tacos al pastor vegetarianos. Entiendo porqué, ya que el cerdo es el ingrediente principal de estos tacos, pero me quede con esa espina. Compre libros de cocina mexicanos, estudié varias recetas de tacos al pastor y alteré la receta para que fuese vegetariana, y lo más sana posible. Si mi esposo lee esto, me estaría diciendo “Amor, estan ricos, pero esto no es tacos al pastor”. Y… probablemente tenga razón, pero no importa, yo creo que son tacos al pastor, y son tacos al pastor.

Nunca probé  los originales, así que no tengo mucho punto de comparación, pero sea lo que sea, estos tacos me quedaron muy muy ricos! En vez de cerdo, usé hongos ostra rey y coliflor, dos ingredientes muy versátiles que aportan al plato mucha textura. Además hice tortillas caseras con maíz morado! Como en todo taco, la tortilla es importante, por lo que les recomiendo que sean caseritas. Hice unas 100% de maíz morado y otras con mitad maíz morado y mitad harina de maíz normal. Las que solo son de maíz morado, quedan un poco quebradisas, pero son muy ricas. Bueno.. ahora si! A comer tacos!

I’ve been craving a vegetarian version of tacos al pastor since my last trip to Mexico. I loved Mexico, and all its food, vegetarian recipes, ingredients I had never heard of, sauces, spices, definitely had a lot of tacos, but not vegetarian tacos al pastor. Over there this would be blasphemy. Tacos al pastor are traditionally made with pork, and that is the main ingredient, and a vegetarian version would never be the real thing (which is partly true, but this has never stopped me from creating my version). So the next step, was to study traditional recipes of this very unique taco, and reinvent it for it to be vegetarian and healthy. If my husband reads this, he would say “Babe, this are good tacos, but please don’t call them tacos al pastor, because they are not, just call them cauliflower tacos”… and he is probably right, but I don’t care. This are my tacos and I’m sticking to them. 

Truth be told, I’ve never had the real version, because I’ve been a vegetarian for more than 10 years now, and just went to Mexico for the first time, last year, but I promise I studied a lot! Instead of pork, I used King oyster mushrooms and cauliflower, two very versatile ingredients that add texture and absorb all the wonderful sauce beautifully. Also, I made homemade tortillas with blue corn flour. Homemade tortillas make all the difference in the world! Give this a try and let me know what you think! It’s Taco time!

TACOS AL PASTOR

(Para 4)

INGREDIENTES

SALSA DE PIÑA (Ananá)
  • 2 dientes de ajo picados
  • 2 cucharadas de chile en polvo
  • 2 cucharaditas de paprika
  • 1/2 taza de jugo de piña
  • 2 tazas de trozos de piña fresca
  • 2 cucharadas de aceite de oliva
  • 1 cabeza de coliflor cortada en floretes
  • ½ de una cebolla dulce en rodajas finas
  • 1 jalapeño cortado en cubitos
TORTILLAS
  • 1 taza de harina de maíz azul
  • 1 taza de harina de maíz
  • 1/4 taza de aceite de oliva
  • 1 cucharada de sal
  • 1 taza de agua tibia
PARA SERVIR
  • ½ taza de cilantro fresco picado + más para servir
  • 4 onzas de queso feta o de cabra (opcional)
  • Cuñas de lima para servir

PREPARACIÓN

  1. En una licuadora o procesador de alimentos combinar el ajo, chile en polvo, paprika, jugo de piña y 1 taza de los trozos de piña. Mezclar hasta que se forme una salsa. Ponga la salsa de piña a un lado.
  2. Calentar una sartén grande a fuego medio-alto y agregar aceite de oliva. Agreguar el coliflor y las cebollas, sazonar con sal + pimienta. Cocinar por 12-15 minutos o hasta que el coliflor y las cebollas hayan caramelizado.
  3. Reduzcir el fuego y revolver en la salsa de piña y el jalapeño. Cocinar a fuego lento durante 8-10 minutos o hasta que la salsa se haya reducido y cubra el coliflor. Retirar del fuego y remover el cilantro.
  4. Mientras tanto, hacer las tortillas. En un tazón grande mezclar 1 taza de harina de maíz azul con 1 taza de harina de maíz tradicional, sal, 1/4 taza de aceite de oliva y 1 taza de agua tibia. Mezclar bien hasta que se forme una masa.
  5. Con las palmas de las manos, formar las tortillas y cocerlas sobre una sartén grande hasta que se doren por ambos lados. Poner a un lado, hasta la hora de servir.
  6. Dividir el coliflor entre las tortillas, rociando cada taco con la salsa restante que queda en la sartén. Cubrir cada taco con cilantro fresco, jugo de limón y queso.

TACOS AL PASTOR

(Serves 4)

INGREDIENTS

PINEAPPLE SAUCE
  • 2 cloves garlic minced or grated
  • 2 tablespoons chili powder
  • 2 teaspoons paprika
  • 1/2 cup pineapple juice
  • 2 cups fresh pineapple chunks divided
  • 2 tablespoons olive oil
  • 1 head cauliflower cut into florets
  • ½ of a sweet onion thinly sliced
  • 1 jalapeno seeded + diced
TORTILLAS
  • 1 cup of Blue corn flour
  • 1 cup of corn flour
  • 1/4 cup olive oil
  • 1 tablespoon of salt
  • 1 cup of warm water
TO SERVE
  • ½ cup fresh cilantro chopped + more for serving
  • 4 ounces feta or goat cheese crumbled
  • lime wedges for serving

METHOD

  1. In a high-powered blender or food processor combine the garlic, chili powder, paprika, pineapple juice and 1 cup of the pineapple chunks. Blend until completely smooth. Set the pineapple sauce aside.
  2. Heat a large skillet over medium-high heat and add the olive oil. Add the cauliflower and onions, season with salt + pepper. Cook for 12-15 minutes or until the cauliflower is tender and the onions have caramelized.
  3. Reduce the heat to low stir in the pineapple sauce and the jalapeño. Simmer for 8-10 minutes or until the sauce has reduced and coats the cauliflower, there will still be sauce left in the pan, this is good. Remove from the heat and stir in the cilantro.
  4. Meanwhile, make the tortillas. In a large bowl mix 1 cup of Blue corn flour with 1 cup of traditional corn flour, salt, 1/4 cup of olive oil and 1 cup of warm water. Mix well until a dough forms. 
  5. With your palms, form the tortillas and cook them over a large hot skillet until browned on both sides. Set aside, until serving time. 
  6. Divide the cauliflower among the warmed tortillas, drizzling each taco with the remaining sauce left in the pan. Top each taco with fresh cilantro, lime juice and cheese.
