Preparando leche de almendras + Postre de Chia y frambuesas || Making Almond Milk + Raspberry Chia Pudding

Antes de pasarles la receta de esta riquísimo postrecito de semillas de chía y frambuesas, tengo que empezar por el principio... La leche de Almendras. Se que suena complicado hacer leche de almendras, pero es realmente fácil si tenes almendras, agua y una licuadora. Los pasos son súper simples y la satisfacción muy alta! La clave para hacer esta leche vegana y cruda es dejar las almendras remojando por 8 horas o más. También, algo clave es, que una vez lista, la guardes en un recipiente de vidrio por no más de 3-5 días y que lo batas antes de tomarla porque se asienta un poco en la heladera. Hice un instructivo con dibujitos que podes imprimir (esta un poquitos mas abajo). 

Ahora sí... el postrecito de chía. Hace ya un tiempo que amo las semillas de chía. Para ser tan chiquitas y poco llamativas son súper poderosas y tienen mucho mas potencial de lo que se les acredita. Mucha gente no sabe que estas semillas también pueden hidratarse y absorben hasta 9 veces su peso en agua! Además son una excelente fuente de Omega-3, toneladas de fibra, proteína completa (4 gramos por onza), y antioxidantes. Las podes usar de mil maneras: en un vaso de agua con limón o lima, en ensaladas, sobre yogurt, mezcladas con granola, en un batido, como aglutinante para hornear sin huevo, y en esta receta de postrecito vegano!

Te recomiendo preparar este postrecito y disfrutarlo en el desayuno o como un snack a la tarde. La cantidad de fibra que las semillas de chía mezcladas con la leche de almendra aportan son gigantes, y esto te va a ayudar a mantenerte llena por mas tiempo. Además en estos meses de frío (por lo menos en el hemisferio sur) te ayuda a mantener tu piel hidratada. La verdad es un postre genial! con muchos beneficios y muy rico! Pruébenlo!

Before I give up the recipe for this wonderful chia raspberry pudding, I have to start at the beginning ... Almond Milk. I know it sounds complicated to make almond milk, but it's really easy if you got the right elements: almonds, water and a blender. The steps are super simple and the result is amazing! The key to making this vegan raw milk is the soaking period of the almonds. They need to absorb and sit for at least 8 hours in order to produce a better milk quality. Another important tip is to store it in a glass container for no more than 3-5 days and to shake it before your drink it. Now ... the chia pudding. I've been in love with chia seeds for a while now. For such a small and inconspicuous seed they are super powerful and have a ton of potential. Many people don't know that these seeds can hydrate and absorb up to 9 times its weight in water! They are also an excellent source of Omega-3, tons of fiber, complete protein (4 grams per ounce), and antioxidants. They can be used in many recipes: in a glass of water with lemon or lime, in salads, on yogurt mixed with granola, in a smoothie, as a binder for baking without eggs, and in this wonderful vegan pudding recipe!

I recommend you enjoy this pudding at breakfast or as an afternoon snack. The amounts of fiber that chia seeds mixed with almond milk provide are huge, and this will help you be full for longer. Also in these cold months (at least in the southern hemisphere) it will hydrate your skin. The truth is it's a great dessert! With many benefits and very rich! Try it!
