Thanks for sharing your recipe with your readers. This is a good idea and I can't say that I've ever had peaches in this way before. It should go well with the ingredients that you have recommended here. Spicy and sweet at the same time.
Shallots are pretty hard to find so I am glad that you left that tip about what to use as a substitute if it is difficult to locate enough of that ingredient. I like purple onions and they look good in salads too.
