Crema de remolacha | Beetroot cream soup

Finalmente puedo contarles que voy a estar trabajando junto a Crate and Barrel Costa Rica! Voy a crear recetas especialmente para ellos (esta es la primera!) usando sus artículos de mesa para estilizar las fotos y cocinar!

Para esta receta use la taza grande Marin, porque amo agarrar la sopa con mis manos cuando estoy disfrutandola, una servilleta Helena rallada y sus cubiertos Aero en negro. Pueden encontrar todo esto en su tienda en Avenida Escazú.

I’m just jumping up and down because I can finally share with you that I have teamed up with Crate and Barrel Costa Rica to create recipes and use all their beautiful tableware, linens, marbles and more to style my dishes. This is my first recipe for them and I hope you love and enjoy it as much as me! 

I used their Marin large jumbo Mug to serve the Beetroot cream, because who doesn’t love to enjoy their soup in a beautiful mug, helena linen striped napkin and aero black flatware set. You can find these and more tabletop dinnerware at their store in Avenida Escazú!

CREMA DE REMOLACHA

INGREDIENTES

  • 1 remolacha
  • 1/2 calabaza mantequilla
  • 1 cucharada de tomillo fresco
  • 1 diente de ajo
  • 2 puerros
  • 1 cucharadita de vinagre de manzana
  • 1 cucharada de sal marina
  • pimienta a gusto
  • 1 cucharada de ghee
  • 1 taza de caldo de vegetales
PICADILLO DE HONGOS
  • 1 taza de hongos
  • 1 cucharada de ghee
  • sal y pimienta
  • Tomillo fresco

PREPARACIÓN

  1. Precalentar el honro a 375F/190C.
  2. Cortar la calabaza y la remolacha en cubos y asar con un poco de ghee, sal y pimienta por 20 minutos.
  3. Picar ajo, puerros y tomillo y en una olla para sopa saltear con ghee por unos 3 minutos.
  4. Agregar remolacha y calabaza asada junto al caldo de vegetales, vinagre de manza y 1 tazas de agua.
  5. Dejar cocinar por 20 minutos y luego con una licuadora de mano, licuar con mucho cuidado hasta lograr una consistencia cremosa. Si sentís que esta demasiado espesa, podes agregar un poco más de agua.
  6. Probar y agregar sal y pimienta a gusto. Dejar cocinar a fuego lento por 10 minutos más y apagar la llama.
  7. Para el picadillo de hongos, picar los hongos bien chiquitos y saltearlos a fuego alto con ghee, sal y pimienta hasta que estén bien dorados.
  8. Servir la sopa con picadillo de hongos y tomillo fresco.

BEETROOT CREAM SOUP

INGREDIENTS

  • 1 large beet
  • 1/2 butternutsquash
  • 1 tablespoon fresh thyme
  • 1 clove garlic
  • 2 leeks
  • 1 teaspoon of apple cider vinegar
  • 1 tablespoon sea salt
  • pepper to taste
  • 1 tablespoon of ghee
  • 1 cup of vegetable broth
MUSHROOM HASH
  • 1 cup of mushrooms
  • 1 tablespoon of ghee
  • salt and pepper
  • Fresh thyme

PREPARATION

  1. Preheat the honor to 375F / 190C.
  2. Cut the butternut squash and beetroot into cubes and roast with a little ghee, salt and pepper for 20 minutes.
  3. Chop garlic, leeks and thyme and in a soup pot sauté with ghee for about 3 minutes.
  4. Add roasted beet and butternut squash, vegetable broth, apple vinegar and 1 cup of water.
  5. Simmer for 20 minutes and then with a hand blender, blend very carefully until achieving a creamy consistency. If you feel that it is too thick, you can add a little more water.
  6. Taste and add salt and pepper to taste. Let cook over low heat for 10 more minutes and turn the heat off.
  7. For the mushroom hash, chop mushrooms into very small pieces and sauté them over high heat with ghee, salt and pepper until they are brown and crispy.
  8. Serve the soup with mushroom hash and fresh thyme.
